I am adding 2 new pages to my blog; One with a list of products I am loving, and another with gluten-free recipes I have tweaked to perfection! I am still at the beginning stages of formulating some gluten free recipes, but there are a couple of new products I have tried recently that I wanted to share.
I have never tried the Popchips that are all over the blog world, but I found what I can only imagine, is a very similar chip at Trader Joe’s.
Has anyone tried these? I am not a chip person. I really don’t care about potato chips or any salty snacks, really. I love my sweets, but the salt? I could take it or leave it. So I was really surprised by how much I liked these chips. I bought them because they appear to be gluten free. Like so many products, they are processed on equipment that also processes wheat, so that can’t be labeled “gluten-free,” but the ingredients themselves are gluten-free.
I love when I can pronouce every item on the ingredient list!
These chips were not greasy, and tasted light and crispy. I loved them!
But what really sold me on these chips was the nutrition label! I am the kind of person who likes to eat for volume! I love to be able to eat a lot for not too many calories. When I have more food in front of me, I a psychologically more satisfied. These chips are only 120 calories for 22 chips. That’s 1/3 of the bag. Not bad. And with no saturated or trans fat, I like them even more. Of course, there is a good amount of sodium in a serving, but relative to other chips, it doesn’t seem too bad.

Last night I tried PB2 for the second time. The first time I mixed 2 tablespoons with a tablespoon of water, as the directions instruct. It wasn’t the same rich, nutty flavor in regular peanut butter, but I liked it and knew I would like it even better in a sandwich or mixed into something else. So last night I mixed 2 tablespoons into instant chocolate pudding. I used one cup of milk, instead of the 2 cups of milk suggested because I like it when the pudding is really thick. (I have added caned pumpkin before to thicken it as well…you don’t taste the pumpkin underneath the chocolate). I also used almond milk simply because I really like Blue Diamond’s Vanilla almond milk (but that’s a review for another day).
Back to the peanut butter…. This tasted like a creamy Reeses! It was wonderful. And to add to the wonderfulness…I added a banana (who doesn’t love a banana with peanut butter or a banana with chocolate?!). Amazing! Topped with some Cool Whip (one of my guilty pleasures) and it was perfection. I will be doing this again. I am excited to experiment more with my PB2 and to try the Chocolate PB2 as well. Mmmmmm!

On the menu tonight are spring rolls. Dave agreed to try them even though he has said before that they look like condoms stuffed with vegetables. Maybe so, but I think they’re pretty darn good! If I pair them with Pillsbury Crescent Rolls, I hope he’ll agree….

I have not tried that peanut butter yet, but it’s all over the blog world! If it tastes anything like Reese’s pb, I’m all over it!
When the PB2 powder is mixed with chocolate pudding you get the Reese’s flavor. Yum!
I wasn’t into the powdered PB until you said it tasted like creamy Reese’s. LOL. But I am definitely a salty chip person. I haven’t tried Pop Chips or the Trader Joe’s version but I’d like to soon. Whenever I eat a sandwich or wrap for lunch, it isn’t a real meal without my chips on the side.
We are definitely opposites when it comes to snacks. Give me sugar! Probably why I loved the PB2 with pudding. It was a creamy Reeses…no other way to describe it!

I got those same popped chips from TJ’s!! I love them! I also love being able to eat 22 of them for only 120 calories!! TJ’s should put me on a commercial for these chips… I could go on and on about how in love I am with them!!

Definitely try the PB2…it seems very versatile.
