Not that kind of running (although I did that too today). I am running out the door for my Wednesday evening class. 5-10pm! Last week he let us go a bit earlier, so I am crossing my fingers we aren’t there until 10 tonight.
One good thing about having an evening class is that I have the whole day to study. On the other hand, after studying chemistry for the last 5 hours, the last thing I want to do is spend another 5 in a Microbiology Lab! Oh well. It’s 8 weeks long, and a quarter of the way through after tonight!
I am really excited to have this class done in 8 weeks. Then I will only have 2 classes left this semester and a couple more over the summer. Once I am down to only taking a couple of classes, I think I will be able to get a part-time job. I am thinking a gym would be the perfect place to work because you can often work part-time and you get access to the gym. I worked at the front desk at Healthworks when I was in grad school. That was a great gig because its such an awesome gym. I’ll have to see what I can find later in the spring.
I’m runnin gto class momentarily, but I’ll leave you with my yummy leftovers for lunch! I drained the broth from the last of my soup that I made a couple nights ago and added some steamed spinach and broccoli slaw, along with some Laughing Cow! It was perfect! One of the perks of studying from home is that I can make a hot lunch pretty easily!
Quinoa is good in just about anything! I paired this (which turned out to pretty much be a hot salad) with a half of an acorn squash. Its really a toss up for me now between butternut and acorn squash. I love them both!

If you were going back to school, what would you study?
I would not choose bacteria! But unfortunately, microbio is a prerequisite for dietetics! Ah, what you do for love!




Besides study and working towards my Autism Credential, and asside from an education related classes – if I were to go back to school to study something, it would be along the lines of marketing and/or graphic design. Something I was originally going to get into before I decided to go with my true passion.
Oh my gosh. A 5 hour class?! I guess it makes it better that it’s a lab, because sitting for five hours and listening to a professor babble on and on about bacteria may be worse than death for me. I have zero attention span, it’s a wonder how I made it through college and grad school.
I’ve been eating a lot of quinoa lately. Tonight I simple had a bowl of quinoa with chunks of wild salmon! I also had some kale chips on the side…as in a whole bunch because I can’t stop.
When I made the eggplant the other day I took the skin off, like you said, yet it still gave me bad stomach pains. I take it eggplant doesn’t do that to you? It’s so annoying, I LOVE eggplant

DANG girl! a class until 10PM? that is beastly! i would get hangry-def bring snacks!
I am back in school for Master’s #2, which is in human relations. If I could go back it would be for a PhD in nutritional epideiology which I was previously going to do before moving overseas. Any PhD in nutrition sciences will do since I want to be a tenured professor at some point. Hope class went well and not until 10 pm.
That is a seriously long class! I would probably go for journalism…
I don’t think I would be able to take a 5 hour class – I guess having it only be 8 weeks would help me get through it though.
Your lunch looks amazing – love all those veggies! What a great idea to get a job at a health club – the perks would be be a definite bonus.
