It's so true, spaghetti squash is my best friend. In fact, I'm shocked you allowed it to stay uncooked to the point of being wrinkled! I don't think I've ever seen that stage before. I've also never heard of/scene the Swiss Laughing Cow cheese! I need to look closer. I really fell in love with polenta this week. Even though it's corn flour, I don't care, it's enriched with the vitamins I need and I get my fiber and antioxidants (the important things I'm missing from a whole grain) elsewhere.
