Happy Monday everyone! Is it really Monday again! This weekend included cleaning and studying so I’m not really feeling like I had a weekend! But mixed in with all of the work were a couple of amazing meals! I showed you my calzone success, but now I have to show you what I did with the remainder of the calzone stuffing….
I had a large bowl of my ricotta/mozzerella/parmesan/spinach mixture left over, so I wanted to make a veggie lasagna. Since glutenous pasta is out, and I didn’t have rice noodles, I made eggplant lasagna rollups! So simple, and incredibly good!
I sliced the eggplant lengthwise into 1/4 inch slices and baked the slices until they got soft and “bendy.” Then I put a glob of the cheese mixture on the end of one slice and rolled it up. (“Bendy” and “glob” are the technical terms
)
I loosely covered the dish and baked it for about 20-25 minutes at 375. I made Dave spaghetti and meatballs (with crescent rolls!) because we weren’t confident he would like this. But he did try one, and he…. “didn’t not like it.” Okay…I can live with that. I mean, how can you not like this:
I served mine with a side of steamed broccoli slaw that I mixed with Laughing Cow. Great combination!
There was a lot of cheese in this meal. I used mostly fat free cheeses because my stomach doesn’t tolerate the fat in dairy. But even with fat free cheese, this dish tasted increibly rich and creamy. Highly recommended!

Now, I want to share some of my eats with you! I’ve never done a giveaway before, but the kind folks at Shabtai Gourmet Bakery sent me so many tasty baked goods that I wanted to share some with you! (And remove some of the temptation from my pantry!) Look how much they sent!! I need some help with the last couple of boxes!
I tried several different products and I can tell you that whether you are gluten-free or not, these gluten-free treats are incredibly good!
I tried a coconut raspberry roll:
I didn’t expect to love this. I am a chocolate person, so I usually pass on non-chocolate desserts. But this was to die for! It was so moist and soft.
I also had the brownie bites. Aren’t they cute?
Brownies are my very favorite dessert and these little darlings didn’t disappoint. I showed you one, but I assure you, I ate many more than that on that night!
Lastly, I tried some rainbow cookies. So pretty!
Rainbow cookies are not a favorite of mine. So if you don’t like rainbow cookies, you probably won’t like these. But if you do like rainbow cookies, these taste just like the regular gluten version, and you will undoubtedly love them.

Love the eggplant idea. Super creative. I would love to win these treats, although who knows if they would survive the trip here. Worth a shot though. The rainbow cake is actually my (childhood) favorite and I also like any chocolated cake.

My favorite baked good is cookies, no doubt about it! I love choc chip, white choc macadamia, and kahlua cookies. Now . . . on to that fabulous eggplant dish. That looks insanely awesome. One of my favorite meals of all time was an eggplant dish that I ate in Nashville, TN when I was 16. I’ve been trying to recreate it ever since, and your dish looks very similar. I’m bookmarking this baby!
Shannon your eggplant roll-ups look fabulous! I really wish I could tolerate eggplant, but I can’t. I even did what you do and took off the skin last time, but no luck.
I’m guessing those fabulous desserts have some type of sweetener in them that I can’t tolerate. Having fructose intolerance means I really have to stick to a fairly raw diet. I don’t know if that’s good, or bad. I won’t enter because Nick would end up eating them all! haha. That coconut rasberry roll is right up his (and my!) alley. I can’t have coconut though, what a serious bummer.
I ate the cake for my birthday, and while I was verrrry happy while I was eating it, the next day I looked so bloated my friend asked me what was wrong with me. I think having been so good about staying away from wheat/fructose, now when I eat just a little the effect is ten fold! Yikes.
