What a busy day Monday turned out to be. Today will be more of the same. But it’s amazing….I really don’t mind now that the business is associated with school and getting closer to what I really want to do. Monday’s used to be so hard to get through. It started Sunday night and lasted right through the first half of the week. Not anymore. I feel so lucky to be able to do this! You can ask me again after tomorrow’s Microbiology test, but for right now, I am really excited to be working on my career change.
This is definitely a big year, which was a topic of discussion over dinner last night. Next on tap is searching for our first house. A good dinner brings out good conversation, you know? And this was a really good dinner. I had some pumpkin to use up, so while Dave made a big Belgian waffle, I made French toast with the last 3 slices of my EnerG bread. I bought a couple other loaves to try and they should be arriving this week. But this rice and flax loaf was pretty good.
My only complaint with the bread is that it is very dry. Unfortunately, I think that goes along with eating gluten-free breads. When heated, as suggested on the packaging, it is definitely better. But the last time I made French toast, it was still a little dry even after dipping in egg and heating on the griddle. So this time, I tried to soak the bread for a little while to get the egg to seep into the bread. It worked! This French toast was so moist and “squishy.” (That is another one of my technical cooking terms!)
The toast is slightly orange because I mixed some pumpkin in with the egg. And as if that’s not enough pumpkin, I added more on top. My favorite topping on French toast, pancakes, or oatmeal is a sliced and heated apple with pumpkin, raisins, and pumpkin pie spice. Amazing!
While we are on the topic of yummy, sweet things, let me also tell you about a new product I tried…
I have seen these int he grocery store, but I haven’t bought them becasue, like so many things that are made specifically gluten-free, they are pretty pricey. I think this box is almost $6 in the grocery store. But I bought these through iherb and got $5 off, so I figured it was a good chance to try something I have been eyeing.

Now back to the Glutino Bars….
These are fantastic! Soft and moist. They taste very much like Nutrigrain Bars and have similar nutritional stats. I have crumbled these in yogurt and I have and eaten them alone. At 130 calories, they are a good snack, especially combined with some protein packed yogurt. They’re expensive, so I won’t buy them all the time, but now that I know that they aren’t a waste of money, I will pick them up ocassionally.

Cute little GF bars. So glad these days there are options. Back in the day it really sucked for people who needed GF diets.

Oh your french toast looks so good!! Andrew’s had those same bars before and he liked them, but we don’t get them very often b/c of the price. Glad you enjoyed them!!
I love having breakfast for dinner. I’m glad you are happy with the changes you are making- looking for a house is a lot of fun (stressful, but fun!). What area are you going to looking in?

Glad soaking the bread for a while helped. Perhaps you could try overnight french toast where you soak it in the egg/milk mixture overnight and bake in the morning. That may be great with that bread…
I haven’t had a nutrigrain bar in years – they were my go to breakfast in college – I got kinda burnt out on them.
