Thank you all for your well wishes for my mom. She’s doing better and is now hobbling around on her own. It is really amazing that they can repair a knee through a couple of tiny incisions, and then you can be back on you feet (albeit a bit wobbly!) within a few days! Ah, the marvels of modern medicine!
Sorry to be MIA for a couple of days, but given the choice between family and blogging, I think we would all choose family! I have enjoyed being here for the last couple of days. We got in lots of good dvr’ed tv (LOST continues to amaze me!), a movie, some productive studying with my genius brother, and of course, some good food!
After the condom-shaped spring rolls on Thursday, I recreated a couple other dinner favorites to share with my mom. She gave both Friday’s and Saturday’s dinners rave reviews! But more amazing that that…last night’s vegetarian dinner (!!!) even got a string of compliments from my meat-loving dad!
Let’s back up to Friday….I requested that my mom have a spaghetti squash on hand so that I could make a repeat of the Spaghetti Squash Spaghetti Squash Alfredo that I made last week. As promised, I came in the door to find a squash waiting for me. So into the pan went the contents of an entire cooked squash, 2 cans of diced tomatoes, a bag of spinach, and 5 Laughing Cow Light Swiss wedges. All melted together…..
And all dished up! At the last minute I mixed some chickpeas into each of our dishes. I was afraid to add them to the big dish because I need to measure my beans very carefully….I love beans, but if I get anymore than a serving, I end up with a stomachache. I measured a very conservative 1/4 cup into each of our dishes which I tolerated just fine.
Last night featured a repeat of my eggplant lasagna roll-ups. This is the one that got my dad excited! Just like last time, I combined 3 cheeses (ricotta, mozzerella, and parmesan) with some Italian Seasoning, diced pepper, and artichoke hearts. Then, after cooking the slices of eggplant until they were soft and “rollable,” I added the filling and rolled them up.
Paired with a half of an acorn squash…
Delish!
Although I didn’t post over the last couple of days, I did select a winner for my first giveaway on Friday night. A reader named Grace was the name picked out of the hat! Grace, I don’t think you have a blog, but I will email you! Grace’s favorite baked good is cupcakes, piled high with frosting! I agree that its all about the frosting! Oh WOW! Eggplant lasagna roll-ups?!?! Shannon, there are two vegetables that I am SO ANGRY that I can’t eat, eggplant and mushrooms. Seriously, I’d rather be able to eat those than bread!! I don’t know what my deal is with eggplant. I’m convinced my body is overly active when it comes to producing gas (this is a true condition).

I did some shopping this week and bought some oatbran flower and brown rice noodles! I’m excited to give them a try.

Lasagna roll ups are sooooo good! I am cheating tonight and making lasagna that someone else made for me. Football and lasagna sound so good right now.
