It wasn’t Super Bowl Sunday here. No parties. But it was a Super Foods Sunday…that flowed right into Monday!
Sunday afternoon we came back home for our visit to my parents’ on the Cape. Jack and Rudy were very good during their 2 days without parental supervision! Nothing was torn, shredded, or knocked over. Good boys!
Having stopped at the store on my way home, I had a fridge full of fresh veggies…. So dinner was a huge salad with a tomato and spinach omelet and toast on the side.
Yep, that’s right. Toast! I got my next shipment of EnerG bread. This one is a light corn loaf. This one was softer than the white rice flax loaf that I got last time. And this loaf has 3 grams of fiber per serving! I liked this one a lot. And I loved being able to eat my eggs with toast again!
In fact, I enjoyed my egg and toast combo so much that I had scrambled egg and toast for lunch today!
Laughing Cow on the toast really put this over the top! It doesn’t look especially exciting, but it was reeeeeally good!
And because I haven’t eaten enough spinach in the last 24 hours, my dinner also featured spinach…along with lots of other super foods.
This salad featured: spinach, steamed broccoli slaw, artichoke hearts, roasted carrots, tomato, cucumber, blueberries, and shrimp! And a sweet acorn squash on the side. It was wonderful, but unfortunately, in the picture it looks like I have moldy shrimp! I assure you, they aren’t! The blueberries bled all over the shrimp and they look less than appetizing!
I love weekends away, but it always means coming home to play catch up. Vacuuming, dusting, errands, studying… It was a busy day and I am ready for some couch time with all of my boys.

Ok I am really going to buy some of that bread. I am probably about a week away from being out of my other foods that I purchased (and don’t really like) so I will feel better about buying new bread! I still can’t believe my local Whole Foods and Trader Joes has zero breads that I can eat (well, they have maybe ONE but there is no fiber, so no thanks, I’d rather eat a candy bar).
Eggs and toast, with Laughing Cow cheese, sounds amazing to me right now. I want it, NOW. I’ve been eating tons of spinach lately too, mainly because it’s one of the veggies I can handle, and I love it.

I have never thought of the shrimp blueberry combo – but it sounds great – i usually go witht eh old standby – mandarin oranges and shrimp – but i guess any fruit would do – the blue dye from the berries is an added bonus though

Mmmmm, that omelet is making me salivate!! Looks delicious!! I bought some Whole Foods brand GF bread. It’s sundried tomato flavored. I’m crossing my fingers that Andrew likes it when he tries it. We’ll see…
Love the blue shrimp! Would never have thought to put blueberries and shrimp in the same salad – but your’s looks very appetizing.
