Everyone offered such encouragement the other day when I was struggling with out of control hormones. Thank you! For no rhyme or reason, that was a bad day. But yesterday, I felt good, and today I felt even better. I only cried once today! (Mental note: Do not to watch episodes of “A Baby Story” on TLC when eating lunch at home!)
So again, I thank you all for your kind words and encouragement. You all put me in a good mood, and as a result, I think I rocked my last microbiology test yesterday. One class closer to getting into the dietetics program!
While I am on the subject of thank yous….I am long overdue in thanking Julie for giving me the Sunshine Award last week.
I have had a little sticky note by the computer, reminding me to thank Julie in my next post…and then I would forget. So thank you Julie!
I love Julie’s blog because she always posts something positive about her day at the end of each post.
Since this is a feel good sort of post, I have to show you my feel good dessert from last night! As I’ve mentioned, I am obsessed with the combination of apple, pumpkin, raisins, and cinnamon. It is my favorite topping on pancakes or french toast or oatmeal, and now, I have found a new favorite way to dish up this yummy combo!
I microwaved the apple, pumpkin and raisins until the apple was soft, then added cinnamon and a couple of packets of Truvia. Then I put it in the fridge to cool. A few hours later, I layered the mixture with layers of vanilla Chobani. Topped with Fat Free Cool Whip, this is a keeper! I give you….my Pumpkin-Apple Parfait!
Needless to say, I have another bowl of apple and pumpkin cooling in the fridge as I type this!
But before I can enjoy my new favorite dessert, I need to digest my dinner. This makes an appearance once a week because I can’t get enough of it!
Eggplant parm with gluten-free Rice Chex, in place of bread crumbs. Amazing! I add some parmesan cheese, some Italian seasoning and 2/3-1 cup Rice Chex to a plastic bag, and then crush it with a rolling pin. Its a great gluten-free way to get the eggplant to bake up nice and crispy. I paired my crispy eggplant with steamed spinach, Shirataki noodles, and marinara sauce. Perfection!
I haven’t sold Dave on a meatless eggplant parm, so he got regular pasta with turkey meatballs and…..crescent rolls!
I have one more night of leftover crescent rolls before I need to open a new canister. Who wants to come over in a couple days to open the new canister???? I was surprised by how many people enjoy opening these heart-stopping, explosive death traps! By all means, come over and open them for me…you can stay for dinner!
Gossip Girl is finally back and its been sitting on the DVR since Monday. I need to take my spot on the couch now. Enjoy your night everyone!

My husband hates opening those cans too. They annoy me but thats about it. Luckily the only time we use them is wit the chicken pot pie I make…its a great easy topping!
