My son has been gluten free (and dairy free) for most of his 15 years, so I can tell you that it is definitely a lifestyle that can be managed. Today I&#039;m going to tackle gf mac and cheese (with rice noodles and a vegan roux) and I will let you know how it goes.  I found that I mostly end up cooking ethic dishes like Indian, Mexican and Asian because they typically don&#039;t rely so heavily on gluten products.
